Using grinding as a way to chat is a sweet idea! I've spent a lot of time grinding Lego Skywalker Saga with my ten year old. There are so many things to collect. The conversation is usually quite ridiculous rather than meaningful, though I can see the potential.

My kid plays Fortnite online with his friends and I've been really surprised to overhear some actual conversations while games load or on creative maps. During an actual match of course there's a lot of shouting 'Bro!' 'They're using aimbot!' 'I'm dead, rez, rez!' But in quieter moments I've heard one friend reminding my kid to send a happy birthday message to another friend, a friend informing my kid that his cat died, my own kid volunteering information about what he's been doing on holiday and kids discussing their school report cards together.
